Kopi Luwak (Civet coffee)
Kopi Luwak (Civet coffee) is coffee made from the beans which have been eaten by and passed through the digestive tract of the Civets. This coffee is produced in Indonesia Archipelago, particularly in Sumatra (well-known for its excellent coffee), Java, Bali and Sulawesi. It also produced in the Philippines, East Timor and Vietnam. Civet coffee is also known as the world's most expensive coffee.
The civets forage on only the ripest and sweetest berries as their food. Civet eats the raw red coffee as part of its usual diet. It does not digest the inner beans, instead excreting them still covered in some inner layers of the cherry. It is believed that enzymes in the stomach of the civet add to the coffee's flavour through fermentation of some type. Then they are gathered, thoroughly washed, sun dried and given a light roast.
